To ask "why does it work" is a wonderful - and appreciative question.

There are many answers - all of which have  value to them. Here's what 
springs to my mind.

Think of how the taste and feel of a piece of apple pie  in the mouth is 
almost unrelateable to the ingrediants (including heat) that made it up - 
that seems to parallel the relationship between the processes and outcomes 
of AI.

Here are some magical transformations I have noticed:
Going through appreciatvie processes has added new ideas for me about what 
is fun, what feels good.  I now enjoy helping people feel and appreciate 
their feelings.  I am more aware of when I do something that hurts or scares 
or worries someone and I have abilities - often in the from of appreciative 
questiions - to intercede and change direction.

I meet with an Appreciative group in Vancouver monthly - and we have all 
come to just a enjoy each others company and appreciative process - we have 
replaced natural fear and shyness with openess and affection.

What will happen in the school - what will happen to the values that are 
manifested in the school  when people learn to engage some of the bullies in 
conversations which effectively help the bully feel valued, worthy and 
appreciated by others and himself. - for it is a predicate of AI that 
everybody has value.  How will all that come about - I don't know exactly 
but I do think a successful AI process can make it start.

The learnings of an AI process can't stop at the door - the people who have 
elevated each other by their questions and their listening find that it 
brings them as much pleasure as for the people they have being interviewing.

Once a person has tasted chocolate ice cream - they are very likely to ask 
for more.
