May I suggest that you try
http://appreciativeinquiry.case.edu/ and then search on companies using AI.
I just did that.  114 responses came up and there were a number of
companies.  A relatively well-known one is Green Mountain Roasters.

I am doing a project for a Management class. The project is to find a
company that has or is using AI. 
We are suppose to find companies that we are interested in and I am having a
hard time figuring out which companies have used it or are using it
currently.
I would be interested in any company, however medical organizations would be
the most interesting to me. Do you know of any Medical Organizations that
have used AI?
