Here are a couple of places where AI has been used in universities:

-- you may want to look at some comments from Liz Mellish in Australia about 
using AI in investigating the feasibility of a university wide community 
service centre and students' perceptions of a university division. You can read her

-- The Career Center at the University of Illinois In Champaign-Urbana 
describes how it used the principles of AI to continously improve the effectiveness 
of the Center's programming and services. "Discovering Student Learning 
Outcomes and Program Strateges: An Application of Appreciative Inquiry to 
Evaluation" by Thomas Grayson is written up in AI Practitioner February 2005. You can
